Ingredients for making pineapple puree:

  • Pineapple  500 gms
  • Sugar 1/3 cup + 1/3 cup
  • Water 2 glasses

For pineapple milkshake:

  • Milk 2 glasses
  • Pineapple puree ½ cup
  • Vanilla ice cream  2 scoops
  • Pineapple essence 5-6 drops (optional)
  • Lemon yellow food colour 5-6 drops (optional)
  • Ice cubes

For pineapple lassi:

  • Fresh curd/dahi 2 cups
  • Pineapple puree ½ cup
  • Sugar if required
  • Pineapple essence 5-6 drops (optional)
  • Lemon yellow food colour 5-6 drops (optional)
  • Ice cubes

Method:

  1. How to make pineapple puree/crush: peel and cut pineapple into small pieces. Take ripe pineapple for making lassi and milkshake.
  2. Take a pressure cooker, add these pineapple pices, 1/3 cup sugar and 2 glasses of water. Cover the cooker and let pineapple pieces’ cook for 1 whistle on high then for 5 minutes on low heat. Turn off the heat and let pineapple pieces cool completely in pressure cooker. Once completely cool you can transfer these pineapple pieces with its syrup into an air tight container for 8-10 days and use as per requirement.
  3. Take a blending jar, add sweeten pineapple pieces (do not take pineapple syrup) and 1/3 cup sugar and ¼ cup cold milk/water. You can increase sugar for more sweetness. Grind everything into smooth puree.
  4. Strain the pineapple puree through a fine strainer. Our thick pineapple puree is ready to use. This pineapple crush can be use for making pineapple lassi, pineapple milkshake, pineapple ice cream, pineapple cake or even pineapple puddings and desserts.
  5. This pineapple puree can be stored in refrigerator for couple of hours. But if you want to store it for more days then for making pineapple puree use water instead of milk.

How to make pineapple milkshake:

  1. In a blender take 1/2 cup of prepared pineapple crush, chilled milk, vanilla ice cream, pineapple essence, yellow food colour and lot of ice cubes. Churn for one minute or until frothy. Serve immediately. You can garnish with a tsp of pineapple crush on top of the glass.

 

How to make pineapple lassi:

  1. In a blender add 1/2 cup of the prepared pineapple crush, 2 cups fresh dahi/curd, more sugar if curd is sour, pineapple essence, yellow food colour and lots of ice cubes.  Churn until frothy. Serve immediately. You can garnish with a tsp of pineapple crush on top of the glass.
