In this post I am going to show you how to make crispy, flaky and crunchy mathri in 4 different ways.

Curry patta mathri recipe


  • Maida 1 cup
  • Curry leaves 1/3 cup (chopped)
  • Oil 2 tbsp
  • Water ¼ cup
  • Salt as per taste
  • Chat masala


  1. In a mixing bowl add maida, salt, chopped curry leaves and oil. Mix well.
  2. Knead stiff dough by adding little water at a time. Cover with damp cloth and leave for 10 minutes.
  3. After 10 minutes knead the dough for few seconds.
  4. Divide the dough into 2 equal parts.
  5. Grease the surface and rolling pin.
  6. Take a portion and apply little oil on it.
  7. Now roll the dough into thin chapatti.
  8. Prick the chapatti with a fork.
  9. Cut it into small rectangular pieces.
  10. Heat oil at medium flame.
  11. Carefully drop few rectangular pieces into hot oil and fry at medium low heat until golden and crispy.
  12. Take out the fried mathri and sprinkle chat masala on it. Mix well and serve crispy curry patta mathri.

Dal ki mathri recipe

Ingredients for dal masala:

  • Moong dal 2 tbsp
  • Ginger ½ inch
  • Garlic 3 clove
  • Green chilli 1
  • Salt to taste
  • Cumin ½ tsp
  • Hing ¼ tsp
  • Turmeric powder ¼ tsp
  • Red chilli powder ½ tsp
  • Oil 4 tbsp
  • Water 2 tbsp

Method to prepare dal masala:

  1. Wash and soak moong dal for 5-6 hours in water.
  2. Drain all water and keep aside.
  3. Crush ginger, garlic and green chilli.
  4. Heat oil in a pan, add cumin and hing. Mix once.
  5. Add crushed ginger, garlic and green chilli, cook for few seconds.
  6. Add soaked dal, red chilli powder and turmeric powder. Mix and cook for a while.
  7. Add salt and 2 tbsp water, mix and cover the pan. Cook at low heat until oil separates and dal is 50% cooked.
  8. Turn off the heat and let the mixture come to room temperature.

Making the dough for dal mathri:


  • Maida 2 cups
  • Dal masala (cooked above)
  • Salt as per taste
  • Kasuri methi 1 tbsp
  • Water 3/4 cup
  • Oil for frying

How to make dal ki mathri :

  1. In a bowl add maida, dal masala, salt, kasuri methi (crush methi between palms). Mix well.
  2. Knead stiff dough by adding little water at a time. Cover with damp cloth and leave for 10 minutes.
  3. After 10 minutes, knead the dough for a few seconds.
  4. Divide the dough into small lemon size balls.
  5. Now take the ball, grease it and the surface with oil and roll it in a circle.
  6. Prick the mathri with fork.
  7. Likewise make all the mathri.
  8. Heat oil at medium flame.
  9. Carefully drop few mathri in the oil and fry until they are golden and crispy.
  10. Enjoy the mathris when they come to room temperature.

Layers mathri recipe and ajwaini mathri recipe

Dough for both these mathri is same. So lets first prepare dough for layers mathri and ajwaini mathri.

Ingredients for the dough of ajwaini mathri and layers mathri:

  • Maida 2 cups
  • Ajwain 1 tsp
  • Salt as per taste
  • Oil 4 tbsp
  • Water ¾ cup


  1. In a bowl add maida, ajwain (crush ajwain between palms) and salt. Mix well.
  2. Add oil and mix it well.
  3. Knead stiff dough by adding little water at a time. Cover with damp cloth and leave it for 10 minutes.
  4. After 10 minutes, knead the dough for a few seconds.

How to make layers mathri:

  1. Now take a portion from the above dough, apply little oil on it.
  2. grease the rolling pin and the surface and roll the dough as thin as possible.
  3. Now apply oil all over the chapatti, sprinkle dry flour on it.
  4. Roll the chapatti tightly into a log and cut the log into 1 cm equal portions.
  5. Take a portions and again roll it into a thin circle.
  6. Apply oil on the circle and now fold the circle into a triangle.
  7. Fold and make all the triangles in the same way.
  8. Heat oil at medium flame and deep fry folded triangles until golden and crisp.


How to make ajwaini mathri:

  1. Divide dough into 4 equal portions.
  2. Take a portions, apply little oil and roll it into thin chapatti.
  3. Prick the chapatti with fork.
  4. Cut it into 1 cm thick strips.
  5. Fry the strips at medium hot oil, until golden and crisp.
