In India kulfi is made using different ingredient and in variety of flavours like mango kulfi, chocolate kulfi, paan kulfi, strawberry kulfi, rose kulfi, or simple milk kulfi. But today we are going to make in kesar pista flavour. It is a very tasty and easy kulfi recipe.

For making kesar pista kulfi we usually go for readymade store bought kulfi premix, but it contains artificial flavours and many preservatives which makes it very unhealthy. Today we will make the same kulfi but with our own homemade kulfi premix!!
With this kulfi premix, it gets very quick and easy to make homemade malai kulfi with the same market bought taste and texture.

Instant Kesar Pista Kulfi Premix Recipe/Instant Malai Kulfi recipe/Homemade Badam Kulfi Recipe/Kulfi/ Badam Kulfi/Kulfi Recipe

Ingredients:

For kulfi premix –
• Milk powder 1/2cup
• Powder sugar 1/3cup
• Cornflour 1 tbsp
• Cardamom (ilaichi) 3
• Almonds (badam) 8
• Pistachio (pista) 8
• Saffron (kesar) 1 pinch
• Crushed almonds & pista 1 tbsp

For kesar pista kulfi-
• Milk full fat 2 cups
• Malai 3-4 tbsp

Method:

  1. Add almonds, pista, milk powder, sugar, cornflour, cardamom (remove skin) in a grinder and grind into powder.
  2. Add crushed saffron and nuts 1 tbsp. mix well and keep aside.
  3. You can store this premix into refrigerator for months.
  4. Mix the prepared premix into 1 cup milk. Add the remaining milk and bring it to boil.
  5. Reduce the heat. Cook until thick.
  6. Add malai, mix and give it a last boil.
  7. Turn off the heat and let the mixture cool completely.
  8. Pour the kulfi mixture into kulfi molds or in air tight container and freeze until set completely.
  9. Remove the kulfi from the mold and serve immediately.
