Ingredients for making aloe vera sabji recipe:
- Fresh aloe vera leaf 1 big leaf
- Fenugreek seeds (dana methi) 2tbsp
- Turmeric powder ¼ tsp
- Red chili powder 1 tsp
- Coriander powder 1 tsp
- Salt as per taste
- Oil 2 tbsp
- Cumin seeds (zeera) ½
- Raisins 1 tbsp
- Amchur powder ¼ tsp
- Jaggery grated (sugar) 2 tbsp
How to make aloe vera sabji recipe:
- If you are taking freshly cut aloe Vera leaf, then keep the aloe vera leaf vertical for half an hour to remove yellow latex from it. You can also keep it in a glass.
- After 30 minutes wash it well and trim its both ends.
- If taking store bought aloe vera leaf then no need to remove latex.
- Now remove thorns from its sides and cut aloe vera leaf into bite size pieces. Keep aside.
- Boil 1.5 cup water and add fenugreek seeds in it. Give it a boil and turn off the heat. Cover the vessel and let fenugreek seeds soak for 30 minutes. After 30 minutes drain water and wash fenugreek seeds with fresh water 2 to 3 times. Keep aside.
- In a bowl add turmeric powder, chili powder, coriander powder and salt. Add sufficient water and soak all the spices for couple of minutes.
- Heat oil in a pan add cumin seeds in it.
- Add spice paste and cook until oil separates.
- Add aloe vera pieces, boiled fenugreek seeds and 1 cup water to it.
- Mix well and cover the pan. Cook until aloe vera gets soft and oil separates. Keep stirring occasionally. Add more water when required.
- When all the water evaporates and aloe vera gets soft, add raisins, amchur powder and jaggery to the aloe vera sabzi. Mix well and cook until jaggery melts completely.
- Turn off the heat and serve aloe vera subzi.
