First of all we will make pakoda masala spice mix to be added to pakoda. You can make this spice mix in advance and store it for many months. This spice mix adds very nice flavour to the pakoda. Recipe for Spice mix is given below.

Pakoda Masala recipe

Ingredient:

  • Cumin Seeds (zeera) 1 tbsp
  • Fennel seeds (saunf) 1 tbsp
  • Coriander seeds (dhania beej) ½ tbsp.
  • Pepper (kali mirch)  10
  • Clove (long) 10
  • Carom seeds (ajwain)      a pinch

Method:

  1. Take pan and dry roast all the spices for 2 minutes at low heat.
  2. Powder clove and pepper.
  3. Add remaining roasted spices and crush them.
  4. Our pakoda masala is ready. Cool it and store in air tight container.

Onion Pakoda Recipe/ Onion Pakora Recipe/Onion Pakoda/Kanda Bhajia

 Ingredients for onion pakoda recipe:

  • Onions 1 cup (cut length wise)
  • Roasted masala powder ½ tsp
  • Green chilies 2 finely chopped
  • Chopped coriander
  • Asafetida (hing) ¼ tsp
  • Salt to taste
  • Amchoor powder   ½ tsp
  • Red chili powder 1tbsp
  • Besan ½ cup
  • Oil 1tbsp
  • Water enough to make batter
  • Oil for frying

Method:

  1. Take onions in a bowl and open it layers.
  2. Now add all the ingredients except water and mix well.
  3. Add enough water to combine everything and make a sticky batter. (Do not make it too thick or too thin batter.)
  4. Heat oil at medium heat and add small size pakodas to it. (just make sure do not overcrowd pan while frying too many pakodas at one time).
  5. Flip occasionally for even cooking.
  6. Fry onion pakoda until golden and crisp. Remove fried pakoda from oil.
  7. Serve hot and crispy onion pakoda or kanda bhajia with hari chutney or tomato ketchup.

 

Cabbage Pakora Recipe/ Cabbage Pakora Recipe/patta gobhi pakoda/cabbage pakoda

Ingredients:

  • Cabbage 1 cup grated
  • Roasted masala powder ½ tsp
  • Green chilies 2 finely chopped
  • Chopped coriander
  • Asafetida (hing) ¼ tsp
  • Salt to taste
  • Amchoor powder ½ tsp
  • Red chili powder 1 tbsp
  • Besan ½ cup
  • Oil 1 tbsp
  • Water enough to make batter
  • Oil for frying

Method:

  1. Take a bowl, add all the ingredients except water and mix well.
  2. Add enough water to combine everything and make a sticky batter. (Do not make it too thick or too thin batter.)
  3. Heat oil at medium heat and add small size pakodas to it. (just make sure do not overcrowd pan while frying too many pakodas at one time).
  4. Flip occasionally for even cooking.
  5. Fry cabbage pakoda until golden and crisp. Remove fried pakoda from oil.
  6. Serve hot and crispy cabbage pakoda with hari chutney or tomato ketchup.

 

Corn Pakora Recipe/Corn Pakoda Recipe/bhutta pakoda/sweet corn pakoda/corn pakoda

 Ingredients:

  • Sweet corn kernels (makki ke dane) 1 ½ cup
  • Roasted masala powder ½ tsp
  • Green chilies 2 finely chopped
  • Chopped coriander
  • Asafetida (hing) ¼ tsp
  • Salt to taste
  • Amchoor powder ½ tsp
  • Red chili powder ½ tbsp
  • Besan ½  cup (add more if required)
  • Oil 1 tbsp
  • Water enough to make batter
  • Oil for frying

Method:

  1. Take a bowl and add all the ingredients except water in it.
  2. Mix well. Add enough water to combine everything and make a sticky batter. (Do not make it too thick or too thin batter.)
  3. Heat oil at medium heat and add small size pakodas to it. (just make sure do not overcrowd pan while frying too many pakodas at one time).
  4. Flip occasionally for even cooking.
  5. Fry corn pakoda until golden and crisp. Remove fried pakoda from oil.
  6. Serve hot and crispy corn pakoda with hari chutney or tomato ketchup.

 

Palak Pakoda Recipe/ Palak Pakora Recipe/palak pakoda

Ingredients:

  • Spinach (palak) 1 ½ cup cut length wise
  • Roasted masala powder ½ tsp
  • Green chilies 2 finely chopped
  • Chopped coriander
  • Asafetida (hing) ¼ tsp
  • Salt to taste
  • Amchoor powder ½ tsp
  • Red chili powder 1 tbsp
  • Besan ¾  cup
  • Oil 1tbsp
  • Water enough to make batter
  • Oil for frying

Method:

  1. Take a bowl, add all the ingredients except water and mix well.
  2. Add enough water to combine everything and make a sticky batter. (Do not make it too thick or too thin batter.)

Ingredients:

  • Cauliflower (gobhi) 1 cup finely chopped
  • Carrot (gajar) 1 medium size finely chopped
  • Peas (matar) ½ cup
  • Potato (aloo) 1 cut into small size
  • Spinach (palak) 1 cup thinly shredded
  • Onion (pyaaz) 1 cut into thin length wise
  • Roasted masala powder 1 tsp
  • Green chilies 3 finely chopped
  • Chopped coriander
  • Asafetida (hing) ¼ tsp
  • Salt to taste
  • Amchoor powder ½ tsp
  • Red chili powder 1 tbsp
  • Besan 1 cup
  • Oil 2 tbsp
  • Water enough to make batter
  • Oil for frying

Method:

  1. Take a bowl add all the ingredients except water and mix well.
  2. Add enough water to combine everything and make a sticky batter. (Do not make it too thick or too thin batter.)

Gajar Pakoda Recipe/carrot pakoda

Ingredients:

  • Carrot (gajar) 1 ½ cup grated
  • Onion (pyaz) 1 medium size finely chopped
  • Roasted masala powder ½ tsp
  • Green chilies 2 finely chopped
  • Chopped coriander
  • Asafetida (hing) ¼ tsp
  • Salt to taste
  • Amchoor powder ½ tsp
  • Red chili powder 1 tbsp
  • Besan ½ cup
  • Oil 1 tbsp
  • Oil for frying

Method:

  1. Take a bowl and add all the ingredients in it.
  2. Mix well by applying little pressure so that carrot releases its water and everything combines together. (Can add more water if required if necessary.)
  3. Heat oil at medium heat and add small size pakodas to it. (just make sure do not overcrowd pan while frying too many pakodas at one time).
  4. Flip occasionally for even cooking.
  5. Fry onion pakoda until golden and crisp. Remove fried pakoda from oil.
  6. Serve hot and crispy onion pakoda or kanda bhajia with hari chutney or tomato ketchup.
