ingredients for making kanji:

  • 1 tbsp Rai
  • ½ tsp Saunf /Fennel  seeds
  • 1tsp Zeera roasted
  • Salt to taste
  • 1 pinch hing
  • 5 liters

How to make kanji:

  1. Grind rai, saunf, zeera, red chilli powder, salt until fine powder.
  2. Boil water, turn off the gas. Add grounded masala, mix well.
  3. Cover and keep rai water to ferment for 2 to 3 days. Mix once or twice in a day.
  4. After 2 days check kanji.
  5. Now its time to prepare moong dal vada.

Ingredients to make kanji vada:

  • 1 cup Moong dal
  • ½ inch ginger
  • 1 green chilli
  • ¼ tsp hing
  • ½ tsp zeera
  • ¾ tsp saunf
  • 1 tsp sabut dhania
  • 1 tsp laal mirch powder
  • Salt to taste
  • 4 tbsp besan
  • Chopped hara dhaniya
  1. Wash and soak dal in water for 6 to 7 hours.
  2. Drain water and put dal in a grinder or food processor. Do not add extra water for grinding.
  3. Add all the spices except besan and hara dhaniya.
  4. Grind coarsely. Just add little water (2-3 tbsp) if required.
  5. Transfer the batter in a bowl. Add besan and hara dhaniya.
  6. Mix well and beat the batter for 2 minutes.
  7. Wet finger with water, take small portion, flat it and carefully drop into hot oil.
  8. Fry moong dal vada at medium heat until golden and crisp.
  9. Take out fried vada and soak them into bowl filled with water.
  10. Let the vada soak for 10 to 15 minutes.
  11. Take out vada and gently press it to release extra moisture.
  12. Drop vada into prepared kanji. And let it rest for 5 to 6 hours.
  13. Keep kanji vada into refrigerator until chill.
  14. Sprinkle zeera powder, black salt and serve cold kanji vada.

How to make dahi vada:

  1. Take out vada from kanji, squeeze its extra water and put it into a plate.
  2. Pour some beaten curd, imli chutney, hari chutney, red chilli powder, zeera powder and rock salt.
  3. Dahi vada is ready to serve.
